These soft and savoury oatmeal cookies will make your house smell so gooooood! They are easy to cook and are 100% vegan and refined sugar free.

In this recipe eggs are replaced by chia seeds and water. However, if you prefer eggs, you can easily replace chia seeds with 2 eggs.
Here are the ingredients for 10 quite large cookies:
3 ripe bananas
2 cups rolled oats
1 tsp cinnamon
2 tbsp chia seeds
2 tbsp coconut flour
handful of dried cranberries
handful of dried apricots or sultanas
Cooking instructions:
– make a vegan egg in a separate bowl: sipmly mix 2 tablespoons of chia seeds with 18 tablespoons of water. In around 15 minutes the mixture will become jelly-like.

– mash bananas with a fork, dice the apricots and mix all the ingredients together (including the vegan egg) in a large bowl.

– shape the cookies, put them on the baking paper and bake them in the oven at 200C for around 20-30 minutes depending on how thick they are.

Enjoy them warm or cooled with a cup of tea or almond milk ![]()
