There are so many banana bread recipes out there, but this one is quite easy to make. It’s quite savoury and can be a great healthy snack in between main meals.
Ingredients:
2-3 ripe bananas
300-250g of buckwheat or linseed flour
3/4 cups (1 cup=250 ml) of melted coconut oil
5-6 tbsp. of maple/dates syrup or honey
1 egg or vegan chia egg (2 tbs. chia mix with 6 tbs. of water and let the “egg” sit for a while till it gets jelly-like)
1/2 cup of walnuts or pecan
1 tea spoon baking powder
1 pinch himalayan salt
Preheat the ovnen at 180 C.
Mix manually or with a mixer all the ingredients except for the nuts. Just break the nuts into small/medium-sized pieces and add them to the dough in the end.
The dough should be quite dense and sticky. Put it into the baking tin on top of baking paper sprinkled with some coconut oil and flour. You can put banana halves and some cinnamon on top to make it look pretty 😋
Bake the bread for 30-40 minutes until it’s dry inside (you can check it with a wooden stick).
The bread can be kept in the fridge for up to 5 days.
