Rocket, Goat Feta and Caramelised Pear Salad

This delicious salad is something very special yet really easy to cook. It will definitely surprise your family and friends with unusual and amazing flavour combinations.

Ingredients:

– handful of rocket salad and spinach (take more rocket than spinach)
– 50-80 gr goat feta
– 20-30 gr walnuts (you can roast them a bit for a deeper flavour, but this is optional)
– 1 Pakenham pear
– 2 tbsp coconut sugar

– 2 tbsp ghee

How to Cook:
1. Cut the pear into 2-3 cm thick cubes or triangles.
2. Melt ghee in the pan and roast the pear slices with coconut sugar till the sugar caramelises. It takes around 7 minutes.
3. While the pear is being caramelised, put rocket salad and spinach in a bowl, put the goat feta on top, then put the pear on top while it’s still hot and finally cover everything with walnut pieces.
4. You can use a bit of olive oil, salt and lemon juice as a dressing or simply add some melted ghee in the salad.
5. Toss all the ingredients 10-15 minutes before serving.
