Egg Free Savoury Scramble

This Egg Fee chickpea scramble is a great alternative to a traditional one!

Super easy and quick to make with just a few ingredients.

For 2 serves you’ll need:

1 cup chickpea flour

1 cup water

1/4 tsp. baking powder

1/4 tsp. curry or turmeric powder

1/4 tsp. dry garlic or ground black pepper (optional)

himalayan salt to taste

You can also add almost all kinds of veggies that you have in the fridge.

I had:

– a handful of baby spinach

– cherry tomatoes

– red and green capsicums

1. Mix the flour, baking powder, salt and seasoning together.

2. Add water. Slice the veggies (the thinner the better). Any types of fresh herbs will be a great addition. Mix thoroughly.

3. Pour the scramble onto the frying pan (I used a bit of coconut oil) and fry on each side for a minute. Do not overfry as it might become too dry!
4. Serve with leafy greens and/or avo toastie – yum!
