Black Bean Spaghetti with Creamy Avocado and Broccoli Dressing

This superfoods packed nutritious and healthy meal will bring happiness to the most  fastidious taste buds 🙂

Ingredients (for 2 portions):

  • 1 large  broccoli head
  • 100 g black bean spaghetti
  • 1 ripe avocado
  • 1 lemon
  • 2-3 tbsp. of sunflower seeds
  • 1 tbsp black sesame seeds
  • 4 tbsp. extra virgin olive oil
  • pinch of himalayan salt
  • black pepper to taste

Steam broccoli in a steamer or boil in salted water for around 1-2 minutes (only until bright green “al dente” state, do not overcook).

To make the dressing, mix the avocado pulp, half of the steamed broccoli, juice of 1 lemon, olive oil, salt and pepper in a blender.

Cook the black bean spaghetti as indicated on the package.

Cut the remaining steamed broccoli into small pieces and mix it with spaghetti and sauce. Decorate with sunflower and sesame seeds.

By the way, depending on the contents of your pantry, black beans spaghetti can be replaced by brown or wild rice.
