
The tiny chia seeds are loaded with goodness: high quality protein, antioxidants, fibre, Omega-3 fatty acids, important elements such as calcium, magnesium, and what not. For us, the best way to eat them are smoothies and pudding.
Here’s a simple yet delicious recipe of nutritious chia pudding layered with chocolate parfait.
Ingredients:
– 2 cups of non-dairy milk (coconut milk will be perfect, but almond or soy options are fine too)
– 1/2 cups chia seeds
– 1 ripe banana
– 2 tbs. organic raw honey or maple syrup
– 2,5 tbs cacao powder
– 4 medjool dates (pitted)
– a pinch of himalayan salt.
For chia pudding: Mix 1 cup of coconut milk with 1/4 cup of chia seeds and add honey or maple syrup. Mix all ingredients together with a fork or spoon and let the mixture sit in the fridge for 15-20 minute till it becomes dense.
For chocolate mousse: mix 1 cup of coconut milk with 1/4 of cup chia seeds, dates, cacao powder and himalayan salt.
Puш the layer of chocolate mousse on the bottom of the jar, followed by a layer of chia coconut pudding.
Finishing touch: put some banana pieces (and/or berries, coconut flakes, whatever you desire) on top. You can keep the desert in a closed jar in the fridge for a couple of days… but it won’t stay there for longer than 5 minutes, trust us! 🙂
