Tapioca flour is a popular ingredient for recipes that do not contain gluten, particularly helping to improve the structure and texture of baked goods. It can also be used to thicken soups, sauces, pie fillings and gravies. It has a very mild sweet flavour.
Sometimes this product is also called cassava flour.
Sometimes Arrowroot flour is labelled as Tapioca flour and they are interchangeable in most instances. Arrowroot flour is also a starchy flour made from the rhizomes (rootstock) of several tropical plants. One of these rhizomes is the cassava root from which tapioca flour is made but arrowroot powder may also be from other origins.
